Turkey Soup
Put the turkey carcass, with any scraps of meat or dressing still on it in a big pot and cover with water. Add a few bay leaves, bring to a boil and allow to simmer for a couple of hours. Add more water if needed. Leave it to cool, then put in fridge overnight.
The next day, remove the fat which has settled on the surface. Pick out any meat from the broth and strain it. Add different vegetables, such as carrots, potatoes and bell peppers, all cut in pieces, together with a cup of pasta. Let it all boil until the vegetables and the pasta are ready. Add any left-over meat you have to the soup, including the one from the carcass. Serve with some fresh bread and salad. YUM!
Turkey Curry
Chop one onion and saute in a little oil. It should get soft, not brown. Add two teaspoons of curry powder, with a crushed clove of garlic, and let it fry together with the onion for a minute or two.
You can regulate the hotness of the dish according to your taste, just use more or less curry-powder.
Add leftover turkey meat, cut in smaller pieces. Stir it all together and add about two cups of chicken or vegetable stock. (You can also use water and a stock cube.) Let it all boil together until the onion is soft. Add cream for cooking and let it all mix very well. Serve with plain, boiled rice and a salad.
Turkey Sandwich
Making a nice, big sandwich is a popular way of using the left-over turkey meat. There are endless varieties of this popular dish, and the main difference is in the spread on the bread. You can use mustard, mayonnaise, pesto, cranberry- jelly, sour-cream, blue-cheese dressing, and much more.
A nice piece of cheese also goes very well with turkey. Put your spread on two slices of bread, preferably toasted. Add slices or pieces of turkey on top of one slice, together with some tomatoes or cucumbers (or any other vegetables of your choice). Close the sandwich with the other slice of bread and press it together firmly. Cut in half and serve.
Many people enjoy the turkey left-overs almost as much as the main turkey dinner. There is no end to all the ways of using turkey. Make an omelet with turkey and mushrooms for breakfast, add it in a pasta-salad or simply heat it up and eat it with some of the left-over sauce and jelly.
